How I make pizza

I make Pizza Dough first! This recipe will make 2 pizzas:
1 packet yeast
1.5 cups warm water
4 cups four
1 tablespoon olive oil
Pinch of salt
Pinch of sugar
Plus a little more flour and olive oil

In a large bowl get together the flour and salt
In a small bowl dissolve the sugar into the warm water
Mix yeast into sugar water and let sit 5-10 minutes
Once yeast is active, mix this liquid in with the flour and salt
Add olive oil and knead the dough for 10 minutes
Take dough and coat it in some olive oil
Place in a large bowl and cover bowl with a warm towel
Leave dough alone for 2 hours so that it has time to rise
Dough will double in size!

While dough is rising you have some times to do pizza prep!

Grate mozzarella cheese (roughly 10 oz per pizza)
Warm pizza sauce (I use crushed tomatoes with basil)

Also, you get to decide what toppings to have, here are my suggestions:
Pepperoni
Roasted eggplant and red peppers
Sautéed mushrooms

To prepare pepperoni you need:
1 stick pepperoni

Slice the pepperoni and set aside! This is super easy!

To make roasted eggplant and red peppers you need:
1 eggplant
1 red pepper
2 cloves garlic
Olive oil

Preheat oven to 400 degrees
Slice eggplant into half inch pieces, you will get about eight large eggplant coins, quarter these coins
Chop red pepper into strips, cut strips in half
Mince Garlic
Place eggplant, peppers and garlic in cast iron pan and coat with olive oil
Place in oven at 400 degrees for 20 minutes or until eggplant is soft

To make sautéed mushrooms you need:
1 pound baby bella mushrooms
1 onion
Olive oil

Wash and slice mushrooms
Chop onion
Place all ingredients in cast iron pan on stove top.
Sauté until mushrooms are wilty and delicious!

Now if the pizza dough has risen for two hours, do this:
Get the air out of the dough by giving it a little pat down and a quick knead or two
Sprinkle some flour on a clean surface and roll out two pizzas
Place a pizza on a pizza stone or pizza pan
Let sit for ten minutes to let the dough rise a little and get used to its new shape

Now cover with pizza sauce, mozzarella and your toppings!
Cook at five hundred degrees for twenty minutes
Take pizza from the oven, let cool slightly and serve

I suggest a bottle of red wine and a garden salad as compliments
