Mom says, that when I was a baby she fed me mostly oatmeal, applesauce, squash and lots of cinnamon. Her next child, my little sister, Mom says would only eat starchy things like pasta and potatoes. The third child, my baby sister (who is 18 now) Mom fed a lot of yogurt. Well it seems mom set the standard for the things we’d like to eat. I love all those things (in addition to most food), Barbara loves pasta and potatoes like crazy (she thinks gnocchi is a gift from the heavens) and Miranda loves yogurt. So today, I share with you my oatmeal breakfast:
1 Cup water
Dash of salt
1/2 Cup oatmeal (old fashion oats!)
1 TBSP dried cranberries
1 TBSP raspberry jam or preserves
1 TBSP 1/3 less fat cream cheese or nuefchatel cheese
Bring water and salt to a boil, toss in oatmeal.
Cook oatmeal on stove top, maybe this takes five minutes!
Remove from heat and add in cranberries and jam.
Cover oatmeal and leave for two minutes.
Put oatmeal in bowl and add cream cheese.
I go back and forth between stirring the cream cheese in and leaving it on the side to dabble at. It’s up to you!
My college roommate, Miss Katelyn frequently responded to me “Cool deal, oatmeal.” Well, now a days I can’t eat oatmeal without thinking of that phrase!
