As promised, more non-oatmeal posting (but I had mango oatmeal with BANANA for breakfast and it was rock awesome!!)! Last night for dinner I did some cooking/ inventing and came up with this sauce:
It was great eating and also had some good protein because of my secret ingredient: white beans! I am eating for lunch today because it was so-oh delicious!
1 TBSP olive oil
1 small onion, chopped
2 large cloves garlic, chopped
1/2 TSP dried oregano
1/2 TSP dried red pepper
1/2 TSP dried basil
Salt and pepper to taste
1 28oz can diced tomatoes
1 15oz can white beans, drained and rinsed
First step: heat olive oil in a large pan. Combine onion, garlic, and spices in olive oil and cook until the onion and garlic get their translucent on! Now add the tomatoes and mix well, then add the beans and mix them in well too. Turn the heat up and bring it to a boil. Good, now lower the heat and let this pot simmer until you find it has the perfect consistency; at max this should take twenty minutes. I’d say it take half an hour to cook.
I was sort of inspired by minestrone. I served it over hot whole wheat penne with olives and feta and that was rock awesome too!
