Garlic mashed potatoes
Jack made pork chops and spinach for dinner, so I made some garlic mashed potatoes. So creamy. I left the skins on the potatoes, super yum!
3 very large potatoes, diced
Dash of salt
1/2 cup milk
1 TBSP butter
2 coves of garlic
Salt and pepper to taste
Place potatoes in a pot and cover with water and a dash of salt. Bring to a boil and lower heat. Let simmer until potatoes are cooked. Drain potatoes and mash in a large bowl with butter and milk.
While the potatoes are cooking take the garlic, coat in olive oil, wrap in foil and toss it in the oven for about twenty minutes, then remove it from the oven and chop, toss into potatoes.
