Breakfast this morning I decided it was not going to be an oatmeal day. It was close though, I sort of wanted oatmeal. I will have it tomorrow. So I had a slice of multigrain toast with cream cheese and raspberry jam and a soft boiled egg. I love soft boiled eggs; they are yolky, but not greasy. I used to take my eggs sunny side up, moved on to over easy, but now, I’m really digging soft boiled.
Tonight was taco night at the Dudley house. I am at my parents’ house for the holidays, which means a lot of enjoying mom’s cooking. Tacos consist of organic ground beef cooked with taco seasoning, refried beans, lettuce, tomato, black olives, salsa, taco sauce, onion, cheddar cheese and sour cream. I have been craving home cooked tacos.
