I’m sorry I haven’t posted in a few days. I’ve felt guilty, but I haven’t been cooking that much. I’ve made oatmeal, of course, but not much else. Lunch has largely been leftovers and I’m enjoying a few days here, in Kent Cliffs, New York. But this evening, I did get inspired, in a way I have been inspired before.
You see, my dear boyfriend Jack eats all the time. He is always hungry and I tend to eat a third of the times he does, which still has me consuming several meals a day. He eats about once an hour I’d guess. It is crazy, but he’s always hungry. So tonight when he was eating his fourth serving of diner and snacking on leftover desserts from the holidays, I made Orange Chocolate Yogurt, a flavor I wish I could find at the stores.
In the summer of 2008, I went to Spain for an educational trip. And I ate yogurt everyday as my post-lunch dessert. Lunch there was huge and the yogurt were commonly unfamiliar flavors like pear or coconut. But the best was orange chocolate. This was a yogurt with orange pulp, and shaved chocolate and I replicate it like this:
1 16oz container greek yogurt, 0% fat
2 TBSP mini chocolate chips
1 TSP vanilla extract
Now, mostly, you just add all these things together and you got it. The orange is complicated and I’m not sure if there is an easier way, but I just cut it in half like a grapefruit and try to scrape out the pulp from each section. This is a little labor intensive, so I don’t make this yogurt that much, but when I do, it is worth the delicous!Mis it all together and enjoy!
