Lunch of the Day

Recently, I committed to making some new habits. It’s been difficult to be motivated everyday, but habit change can be difficult. For the last few weeks I’ve been exercising everyday, albeit only ten minutes some days, it is everyday. I decided that I would like some healthy exercise habits and along with them, some healthy eating habits.

Healthy eating hasn’t lent itself to the most creative dish creation, or much cooking. Raw veggies taste pretty good and I’ve been a proponent of plain yogurt for a few years, since my first Fage with honey (Thanks Josie!). The point is, when I eat healthy it usually means not cooking, but maybe some preparing. So it’s been slow here on Pancakes and Flowers, but today I thought I’d share with you my delicious lunch, which was: Steamed carrots, barley and avocado.

My mom is making beef and barley stew for dinner. I don’t know how she is going to do it, but I thought I’d help out by cooking the barley this morning. I have to say, it was really easy. Wash the barley and add it to some boiling water and a little salt, cook for 45 minutes and add water as necessary. I did burn it a little bit, but not too bad. At lunch time I put a few handfuls of baby carrots in a bowl with some water and micro-waved it for about a minute. When I pulled it out I placed about half a cup of barley on top and drizzled with olive oil, sprinkled with sea salt, freshly milled black pepper and a little garlic powder.

The avocado was far simpler: I cut it in half, put some olive oil where the pit once was and sprinkled with the same salt, pepper and garlic powder as above plus some dried parsley.

It was a lovely and scrumptious lunch. I love the way barley feels in my mouth. Like bubbles popping in between my teeth. And the avocado was perfectly ripe and perfectly seasoned (I ought to give myself a pat on the back for that one). I also love slightly steamed carrots like these were, soft and crunchy at the same time. Perfecto! I think this was up there on my favorite lunches of all time. I recommend this lunch to any other eaters out there!
