Macaroni & Cheese

It is a snow day, which is wonderful, because it gives me four more days to study for my pre-calculus test. Wonderful! Hmm… perfect snow day involves be shut indoors with lots of movies, which makes me so happy that my Netflix came yesterday. And the other wonderful thing, we had all the ingredients to make Mac & Cheese from scratch.

1 box whole wheat penne, cooked
4 TSP flour
1.5 cups milk (any but skim will work)
1.5 cups grated cheddar (separated into 1 cup and 1/2 cup)
1/2 cup grated mozzarella
Cooking spray, butter or oil

Okay, so to make the cheese sauce you place the flour and half a cup of the milk in a pan over medium heat. Slowly add the rest of the milk and work up a smooth, thickened mixture. You will have to keep this moving, stirring almost constantly. Bring it to a boil for a minute and add a half cup of cheese, mix it in and do this slowly with another cup worth of cheese, leaving 1/2 cup of the cheddar for sprinkling later. Once you got a cup and a half of cheese mixed in, then you can add some salt and pepper to taste.

Now the next step is mixing the pasta and the sauce in a greased baking dish. I used a cast iron pan, because I like baking in cast iron. Sprinkle with the remaining cheddar and there you go! Broil for five minutes or so and enjoy!
