I was browsing for some good dinner recipes on the Cooking Light website. Something I do often when I know Jack and I will be making dinner together. I came cross a recipe for Chili-Lime Shrimp and we whipped it up with a few minor changes because we had more mouths to feed then the recipe would serve and also because we like things spicy.
Ingredients:
Olive oil
1.5 cups chopped green onions, divided
2 lbs peeled and deveined shrimp
1 TBSP teaspoon chili powder
Juice of two limes
2 TBSP butter
Salt and pepper
Heat a bit of olive oil in a large non-stick skillet, add a cup of the chopped green onions; coat and cook the onions for about a minute. Add the shrimp and the chili powder, keep it all cooking until the shrimp are cooked to your liking. Remove from heat and mix the shrimp mixture with lime juice, butter, salt and pepper. This is going to create a nice sauce. Garnish with the remaining chopped green onions.
We had our with steamed broccoli, rice, french bread and Corona. This meal is the perfect reason to have a Corona! I love dinners that go will with beer!
