I make this soup for lunch from time to time. It is not only very tasty, but also very nutritious. Curry, apple, lentil, spinach; a good mix of veggie, fruit, legume spiced with warm curry. It is a good, hearty lunch. It reheats well and is good with a dollop of nonfat plain yogurt as well.
Ingredients:
1 can of your favorite lentil soup, I like Amy’s
2 apples, cored and sliced
1 cup spinach
1 TBSP curry
Place all ingredients in a pot and cook on low heat until the apples are tender and the spinach is cooked.
I got recipe from my friend Katelyn who makes lots healthy tasty things to eat and then shares them with me. She got this recipe from an old neighbor. It is really lovely and enjoyable, balanced with sweetness and spice.
Well done Jess! It looks wonderful, I was just at the super market and walked past the squash and thought of this soup. Hats off my friend. Perhaps soon, we can get together make soup and fresh bread. And eat the bread with LOTS of BUTTER!
