I’m made this dish to indulge in a rich, creamy, meaty sauce without all the calories of the beefy original. I’m on a “health kick” as it’s the beginning of the year. I’m also on an “actually ever update my blog kick,” so that’s what’s up. Hopefully I keep it going all through 2012. Here’s to Sunday night dinner! Healthy Turkey Bolognese!
Ingredients
20 oz lean ground turkey
4 tsp olive oil
3 stalks celery, finely chopped
2 carrots, finely chopped
1 medium red onion, finely chopped
3 cloves garlic, finely chopped
1 cup of your favorite tomato sauce
1 cup chicken stock
1 tbsp tomato paste
3 tbsp low-fat milk
Salt and Pepper
20 oz lean ground turkey

1 cup of your favorite tomato sauce
1 cup chicken stock
1 tbsp tomato paste
3 tbsp low-fat milk
Salt and Pepper
Brown turkey in two teaspoons of olive oil and remove from pan. Add celery, carrot, onion, garlic, remaining olive oil, salt and pepper to pan and cook covered over medium heat for 8 to 10 minutes. Add turkey, tomato sauce, chicken stock and tomato paste to pan. Cover and simmer for 8 to 10 minutes. Add milk and simmer 5 more minutes.
Serve sauce over cooked whole wheat pasta.
